Let’s just pretend this is a totally appetizing photo instead of what it is because this was a super tasty breakfast….

It’s pretty tough to make photos of things like scrambles and “Crap in a Pan” look beautiful and appetizing.  This is why I shouldn’t be a food blogger.  I can make delicious things, not beautiful things.  But delicious is all that really matters, right?

Banana Bread Breakfast Scramble

  • 2 small bananas, mashed
  • 3 eggs
  • 1 tsp vanilla
  • 1/4 tsp apple pie spice (or any combo of cinnamon, nutmeg, cloves, ginger, etc.)
  • 1 tbsp smooth almond butter
  • Pinch of sea salt

Add everything to a bowl and whisk/blend until smooth-ish.  I left some bigger chunks of bananas and it was nice.

Heat 1 tsp coconut oil in a pan over medium heat.  Add the mixture to the pan and scramble as it cooks.  Cook for 5-7 minutes, or until eggs are completely cooked.

Freestyling suggestions:  Add chopped walnuts or pecans, coconut flakes, raisins or chopped dates, or even bacon for some sweet/salty deliciousness.  Swap out the almond butter for another nut butter….like hazelnut.

Serves 1 or 2, depending on how much you like food.  I like it a lot.
